Description

Delivered in a single wine box with a Pana Dark Fig and Wild Orange Chocolate. The grapes are harvested on the early side for lighter body and more acidity, pressed gently, then traditionally settled and racked, fermented slowly at low temperature (15-17degrees C) using wild yeast, matured in steel tank, racked and bottled without any sulfites added. We encourage the wine to go through malolactic fermentation, to give an “old world” style with apricot colour, a creamy acidity, rosehip notes and a nutty-rather-than-fruity finish, and without the clean acid line of sulfited rose. Sulfites: Zero. Blend: Shiraz 90% Grenache 10%. Maturation: Matured in tank. Filtration: Yes
