Cashew Chicken

Ingredients:

Sauce

  • 1/2 cup hoisin sauce
  • 1/4 cup tamari or soy sauce
  • 1-2 tablespoons real maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sriracha
  • black pepper and chili flakes

Cashew Chicken

  • 3 tablespoons sesame oil (or olive oil)
  • 1 1/2 pounds ground chicken
  • 1 tablespoon arrowroot powder or cornstarch
  • 1 teaspoon paprika
  • 1 1/2 cups broccoli
  • 3 tablespoons salted butter
  • 3-4 cloves garlic, chopped
  • 1 tablespoon chopped fresh ginger
  • 1 cup cashews
  • 1/3 cup pickled ginger
  • 4 green onions, chopped

Method:

  1. To make the sauce. Combine all ingredients in a glass jar.
  2. In a large skillet, combine the oil, chicken, cornstarch, paprika, and black pepper. Cook over medium heat, breaking up the meat as it cooks until browned, about 5 minutes. Add the butter, garlic, ginger, and cashews. Cook 2 minutes, until the butter browns and the chicken gets crispy.
  3. Pour over 2/3 of the sauce. Cook until the sauce thickens slightly. Then, add the broccoli and pickled ginger. Cook another 2-5 minutes. Remove from the heat.
  4. Serve the chicken, broccoli, and remaining sauce over bowls of rice. Top with sesame seeds and green onion. Enjoy!

Ingredients

For the dressing:

  • Juice of 2 lemons
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup tahini
  • 2 Tbsp. red wine vinegar
  • 2 cloves garlic, peeled and roughly chopped
  • 2 small shallot, peeled and roughly chopped
  • 2 scallions, roughly chopped
  • 1 cup baby spinach
  • 1/2 cup fresh dill
  • 1/4 cup nutritional yeast
  • 1 tsp. dried oregano
  • Kosher salt
  • Freshly ground black pepper

For the Salad 

  • 1 small green cabbage, diced
  • 2 Persian cucumbers, diced
  • 3 scallions, thinly sliced
  • 4 oz. feta (vegan or regular), crumbled
  • Fresh dill, for garnish
  • Toasted sesame seeds, for garnish
  • Pita chips or toasted pita for serving

Method

  1. Add lemon juice, olive oil, tahini, vinegar, garlic, shallots, scallions, spinach, dill, nutritional yeast, and oregano to a blender. Blend until smooth, then season to taste with salt and pepper.
  2. In a large bowl, toss cabbage, cucumbers, scallions, and feta until combined. Pour over dressing and toss to coat. Garnish with dill and sesame seeds, and serve with pita.

 

Spring Salad with Goats Cheese

Ingredients

Salad:

  • 3 bunches (24 spears) asparagus 
  • 120g / 4oz snow peas (about 16 large or 20 smaller ones), trimmed and string removed
  • 1 head baby gem or cos lettuce (aka romaine) washed (16 leaves, Note 2)
  • 2 cups fresh or frozen peas (Note 3)
  • 90g / 3oz goats cheese
  • 1 cup (loosely packed) fresh mint leaves, , roughly torn (we will use coriander) 

Lemon Dressing:

  • 1 tsp lemon zest (from 1 lemon)
  • 2 tbsp (30ml) lemon juice
  • 6 tbsp (90ml) extra virgin olive oil
  • 1/4 tsp each salt and pepper

Method

  1. Bring a large pot of water to the boil.
  2. Add snow peas to pot, boil for 1 1/2 minutes.
  3. Add the asparagus spears, boil for another 1 1/2 minutes.
  4. Add frozen peas, and boil for another 30 seconds or until the water just returns to a simmer, and peas turn bright green.
  5. Immediately drain, refresh vegetables under cold running water until cooled to stop cooking process.
  6. Remove the asparagus and snow peas, blot with paper towels to dry. Leave peas in colander to drain, giving them a toss now and then to help them dry. (It's important to dry vegetables, otherwise it dilutes the dressing and it won't stick. You could use a salad spinner with care, o just let them naturally dry which is easier.)
  7. Split the larger baby cos leaves down the middle, use the small ones whole.
  8. Cut asparagus stems in half on a slight angle.
  9. Shake Dressing ingredients in a jar.
  10. Combine vegetables in a bowl, dress and toss.
  11. Arrange salad on a platter (Note 5). Top with small chunks of goats cheese. Serve immediately!

 

Strawberry Muffins

Ingredients

  • 1 cup self-raising flour
  • 1/3 cup caster sugar (we will use raw sugar)
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1 tsp ground cinnamon
  • 40 g butter
  • 1/4 cup fresh strawberries chopped
  • 1/4 cup milk

Method

  1. Preheat oven to 200C.
  2. Grease a 6-hole muffin tray or 12-hole mini muffin tray.
  3. Sift flour into a medium bowl, add sugar, then combine vanilla, cinnamon, egg, butter and milk.
  4. Add chopped strawberries and stir until just combined.
