Spiral Foods sweet and pungent 'pickled ginger' is made from fresh ginger root. It is sliced then pickled in 'ume-su' (plum vinegar) and rice syrup with Shiso leaves for the pick colour. Commonly served with Sushu to cleanse the palate between flavours. This unique ginger can be added to salads or steamed vegetables or eaten on its own.

Boston Bay Baby Calamari is Prawn Seine. Whole cleaned baby calamari, wings, tentacles and tube. Caught in the Spencer Gulf.

Calamari is significantly more tender than the more common squid. The tubes have wing attached and range from 11cm long (large) to really quite small (3 - 4cm).

Tentacles are removed from eyes, cleaned and packed with tubes and wings.

The calamari are frozen when they leave Lettuce Deliver, but it is very likely that they will defrost in transit. We recommend ordering more than one pack to try and help keep them frozen.

Cape Catastrophe is just one of the headlands jutting into the Southern Ocean outside of the protected waters of Boston Bay and the boat harbour of Port Lincoln. King George Whiting is not only the King of the Whiting but king of all the fishes, when it comes to eating pleasure. A finer flaked fish you will never find. It also has an extremely low oil content. The fish portions are frozen when they leave lettuce, but it is very likely that they will defrost in transit. Approx 10 Prawns per pack. Wild caught, snap frozen. Spencer Gulf King Prawns are simply, green (uncooked/raw) really fresh prawns. The prawns are wildcaught using prawn trawlers and seine nets. The Spencer Gulf is the body of water that runs from the Southern Ocean up to Port Augusta in South Australia. Port Lincoln is at the bottom end of the Gulf .The Spencer Gulf prawn fishery is MSC certified, which is the internationally recognised process for recognition of a sustainably managed fishery. Spencer Gulf King Prawns are treated at sea with sodium metabisulphate (preservative 223). This is included on the product packaging labelling. Red Snapper, Golden Snapper, Red Bight Fish (its official name), Nannygai are so named for their beautiful red skin (possibly more pink hued to some colourists). They are line caught in the open waters off Boston Bay. The place that Neptune Island sits. Red Snapper has firm, slightly oily white flesh that can withstand cubing, cutting and dicing. Line caught Red Snapper is considered a sashimi grade fish. The fish portions are frozen when they leave lettuce, but it is very likely that they will defrost in transit. So named for their (very) flatheads, are wild caught, mainly by trawl on the continental shelf off Port Lincoln South Australia. Southern Ocean Deep Sea flat head are endemic to Australia. Meaning if you see a deep sea flat head that is not product of Australia, it?s probably not flathead. Flathead has a low oil content which results in fine, flaked flesh.The fish portions are frozen when they leave lettuce, but it is very likely that they will defrost in transit.
